In the original Indian dish, Mushroom Kurkure, the mushrooms are typically coated in a spiced chickpea flour batter and deep-fried. However, in this Valencian adaptation, we have incorporated traditional Valencian ingredients like chorizo, Manchego cheese, and roasted red peppers into the filling.
