Preparation

1.Preheat the oven to 200°C (400°F).

2.In a bowl, toss the tofu cubes with cornstarch until evenly coated.

3.Heat vegetable oil in a pan over medium heat. Add the tofu cubes and cook until crispy and golden brown on all sides. Remove from heat and set aside.

4.Arrange the crispy tofu cubes on a baking sheet and bake for 10 minutes to further crisp them up.

5.In the meantime, prepare the spicy peanut sauce by whisking together peanut butter, soy sauce, lime juice, honey, chili paste, minced garlic, and water in a small bowl. Set aside.

6.Once the tofu is crispy, remove it from the oven and transfer it to a serving plate.

7.Scatter the sliced bell peppers, onion, carrot, and spring onions over the crispy tofu.
