Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.

2.Add the minced garlic and grated ginger to the pot and cook for another minute.

3.Stir in the diced tomatoes and cook until they start to soften.

4.Add the groundnuts, paprika, cayenne pepper, ground coriander, ground cumin, and salt. Mix well to combine the spices with the other ingredients.

5.Pour in the vegetable broth and bring the mixture to a simmer.

6.Add the chopped pumpkin leaves to the pot and cook until they wilt and become tender.
