Preparation

1.Cook the rice noodles according to the package instructions. Drain and set aside.

2.In a small bowl, whisk together the soy sauce, fish sauce, Belgian beer, lime juice, brown sugar, nutmeg, thyme, and black pepper. Set aside.

3.Heat the vegetable oil in a large pan or wok over medium-high heat. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.

4.In the same pan, add the bell pepper and carrot. Stir-fry for 2-3 minutes until slightly softened.

5.Add the cooked noodles to the pan and pour the sauce over them. Toss well to coat the noodles evenly with the sauce.

6.Add the bean sprouts and green onions to the pan and stir-fry for an additional 1-2 minutes until heated through.

7.Remove the pan from heat and divide the noodle mixture into serving bowls.

8.Top each bowl with cooked shrimp and crumbled bacon.
