Treat your ingredients with care...
- Glutinous rice flour — Ensure you are using glutinous rice flour specifically, as regular rice flour will not yield the desired texture.
- Pandan extract — If pandan extract is not available, you can omit it or substitute with vanilla extract for a different flavor profile.
- Desiccated coconut — Make sure to use unsweetened desiccated coconut for rolling the rice balls.
Tips & Tricks
- To prevent the rice balls from sticking together, lightly coat them with a bit of oil after rolling them in desiccated coconut.
- If the dough is too dry, add a little water. If it's too sticky, add a bit more glutinous rice flour.
- Experiment with different fillings such as red bean paste or crushed peanuts for variety.
- These rice balls are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
- Serve with a cup of hot tea or as a sweet ending to a Chinese meal.
