Preparation

1.Drain and rinse the soaked white beans.

2.In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

3.Add the pork shoulder to the pot and brown it on all sides. Remove the pork and set aside.

4.In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent.

5.Add the carrots, potatoes, red bell pepper, and green bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.

6.Return the bacon and pork to the pot. Stir in the tomato puree, chicken or vegetable broth, bay leaf, smoked paprika, dried thyme, salt, and pepper.

7.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 1.5 to 2 hours, or until the beans are tender and the flavors have melded together.

8.Remove the bay leaf and adjust the seasoning if needed.
