Treat your ingredients with care...

  • Chickpea flour — Ensure that the chickpea flour is fresh and free from lumps for a smooth batter.
  • Turmeric powder — Use a good quality turmeric powder to add vibrant color and a subtle earthy flavor to the fritters.
  • Five-spice powder — If you can't find pre-made five-spice powder, you can make your own by combining equal parts ground cinnamon, cloves, fennel seeds, star anise, and Sichuan peppercorns.

Tips & Tricks

  • For extra crispiness, you can add a tablespoon of rice flour to the batter.
  • Experiment with different vegetables such as zucchini or cauliflower to add variety to the fritters.
  • Serve the fritters with a tangy tamarind chutney or a spicy chili sauce for an extra kick of flavor.
  • Make sure the oil is hot enough before frying the fritters to ensure they cook evenly and become crispy.
  • If you prefer a milder flavor, reduce the amount of spices used in the batter.
