1.In a saucepan, combine the heavy cream, sugar, vanilla bean, and seeds. Heat over medium heat until it reaches a gentle simmer, stirring occasionally.

2.In the meantime, sprinkle the gelatin over the cold water in a small bowl. Let it sit for 5 minutes to bloom.

3.Remove the saucepan from heat and whisk in the bloomed gelatin until fully dissolved.

4.Strain the mixture through a fine-mesh sieve into a pouring jug, discarding the vanilla bean.

5.Divide the mixture evenly among serving glasses or ramekins. Allow them to cool to room temperature, then refrigerate for at least 4 hours or until set.
