In this Note by Note adaptation, the Pecan Symphony takes a unique approach by deconstructing the traditional Pecan Pie and recreating each element using precise molecular techniques. The crust is made using a combination of gluten-free flours and hydrocolloids to achieve a delicate and flaky texture. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a food processor, combine the gluten-free flour blend, cold butter, vegetable shortening, sugar, and salt. Pulse until the mixture resembles coarse crumbs.

3.Gradually add the ice water while pulsing, until the dough comes together.

4.Transfer the dough to a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for 30 minutes.

5.Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Press the dough into the dish and trim any excess.

6.In a saucepan, combine the granulated sugar and water. Bring to a boil over medium heat, stirring until the sugar has dissolved. Remove from heat and let it cool slightly.

7.In a mixing bowl, whisk together the eggs, vanilla extract, ground cinnamon, and sea salt. Slowly pour in the cooled sugar syrup while whisking continuously.

8.Sprinkle the chopped pecans evenly over the prepared pie crust. Pour the filling mixture over the pecans.

9.Place the pie dish on a baking sheet and bake for 40-45 minutes, or until the filling is set and the crust is golden brown.
