Preparation
-
1.In a large mixing bowl, combine the flour, instant yeast, sugar, salt, cinnamon, and nutmeg.
-
2.Make a well in the center and pour in the warm milk, melted butter, and egg. Mix until a dough forms.
-
3.Knead the dough on a lightly floured surface for about 8-10 minutes, until it becomes smooth and elastic.
-
4.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
-
5.Punch down the dough to release any air bubbles. Add the raisins and chopped almonds, and knead gently to distribute them evenly.
-
6.Shape the dough into a loaf and place it on a greased baking sheet. Cover with a kitchen towel and let it rise for another 30 minutes.
-
7.Preheat the oven to 180°C (350°F).
-
8.Bake the Peda Bread for 30-35 minutes, or until golden brown and sounds hollow when tapped on the bottom.
-
9.Remove from the oven and let it cool on a wire rack before slicing.
Treat your ingredients with care...
- Raisins — Soak the raisins in warm water for 10 minutes before adding them to the dough. This will help them plump up and become more tender in the bread.

- This bread is best enjoyed within 2-3 days of baking. To keep it fresh, store it in an airtight container at room temperature.
