Preparation

  1. 1.
In a large mixing bowl, combine the flour, instant yeast, sugar, salt, cinnamon, and nutmeg.
  2. 2.
Make a well in the center and pour in the warm milk, melted butter, and egg. Mix until a dough forms.
  3. 3.
Knead the dough on a lightly floured surface for about 8-10 minutes, until it becomes smooth and elastic.
  4. 4.
Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. 5.
Punch down the dough to release any air bubbles. Add the raisins and chopped almonds, and knead gently to distribute them evenly.
  6. 6.
Shape the dough into a loaf and place it on a greased baking sheet. Cover with a kitchen towel and let it rise for another 30 minutes.
  7. 7.
Preheat the oven to 180°C (350°F).
  8. 8.
Bake the Peda Bread for 30-35 minutes, or until golden brown and sounds hollow when tapped on the bottom.
  9. 9.
Remove from the oven and let it cool on a wire rack before slicing.

Treat your ingredients with care...

  • Raisins — Soak the raisins in warm water for 10 minutes before adding them to the dough. This will help them plump up and become more tender in the bread.

Tips & Tricks

  • For a more pronounced cinnamon flavor, you can increase the amount of ground cinnamon to 1 ½ teaspoons.
  • If you prefer a sweeter bread, you can add an additional 2 tablespoons of sugar to the dough.
  • Serve the Peda Bread warm with a spread of butter or cream cheese for an extra indulgent treat.
  • This bread is best enjoyed within 2-3 days of baking. To keep it fresh, store it in an airtight container at room temperature.

Serving advice

Slice the Peda Bread into thick slices and serve it as a delicious accompaniment to your morning coffee or tea. It also makes a delightful snack or dessert when served with a dollop of whipped cream or a scoop of vanilla ice cream.
