We incorporate traditional Fijian spices like turmeric, cumin, and coriander to add a distinct island twist to the dish. Additionally, we use local Fijian ingredients such as fresh coconut milk and tropical fruits to enhance the flavors and create a unique Fijian culinary experience. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.

2.Add the beef cubes to the pot and brown them on all sides.

3.In a small bowl, mix together the ground turmeric, cumin, coriander, and chili powder. Add the spice mixture to the pot and stir well to coat the beef.

4.Pour in the coconut milk, beef broth, tomato paste, soy sauce, and brown sugar. Stir to combine.

5.Add the bay leaves and season with salt and pepper to taste.

6.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.

7.Remove the bay leaves before serving.
