Preparation

1.Cook the rice noodles according to package instructions. Drain and set aside.

2.In a large wok or skillet, heat the vegetable oil over medium-high heat.

3.Add the minced garlic and stir-fry for 1 minute until fragrant.

4.Add the tofu cubes and cook until lightly browned on all sides. Remove from the wok and set aside.

5.In the same wok, add the sliced onion, julienned carrot, red bell pepper, and snap peas. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.

6.Push the vegetables to one side of the wok and add the cooked rice noodles to the other side.

7.In a small bowl, whisk together the soy sauce, oyster sauce, dark soy sauce, brown sugar, and white vinegar. Pour the sauce over the noodles and toss everything together until well combined.

8.Add the cooked tofu back to the wok and gently toss to incorporate.

9.Cook for an additional 2-3 minutes until everything is heated through.

10.Remove from heat and garnish with fresh cilantro.
