Ingredients
In this Thai adaptation of the Japanese Ebi Furai, we infuse the dish with Thai spices and herbs to create a unique flavor profile. The original dish is typically served with a Japanese-style dipping sauce, while our Thai-style Crispy Shrimp is best enjoyed with a tangy and spicy Thai dipping sauce. Additionally, we incorporate Thai spices such as lemongrass, galangal, and Thai chili peppers to give the dish a distinct Thai twist. 1.In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, lemongrass, galangal, and Thai chili pepper.

2.Gradually add the cold water to the dry ingredients, whisking until a smooth batter forms.

3.Heat vegetable oil in a deep pan or fryer to 180°C (350°F).

4.Dip each shrimp into the batter, ensuring it is fully coated, and carefully place it into the hot oil.

5.Fry the shrimp in batches for about 3-4 minutes, or until golden brown and crispy.

6.Remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.
