Ingredients

In this Goan Catholic adaptation of the American Sticky Buns, we incorporate traditional Goan spices such as cardamom and nutmeg to infuse the buns with a distinct flavor. Additionally, the caramel glaze is given a Goan twist by using jaggery, a traditional Goan sweetener, instead of regular sugar. These modifications create a unique fusion of flavors that reflect the vibrant Goan Catholic cuisine. We alse have the original recipe for Philadelphia Sticky Buns, so you can check it out.

Preparation

  1. 1.
In a large mixing bowl, combine the flour, sugar, yeast, salt, cinnamon, nutmeg, and cardamom for the dough.
  2. 2.
In a separate bowl, whisk together the warm milk, melted butter, and eggs.
  3. 3.
Pour the wet ingredients into the dry ingredients and mix until a soft dough forms.
  4. 4.
Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic.
  5. 5.
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. 6.
While the dough is rising, prepare the caramel glaze. In a saucepan, melt the jaggery, butter, and water over medium heat until smooth and bubbly. Remove from heat and set aside.
  7. 7.
In a small bowl, mix together the granulated sugar, brown sugar, cinnamon, nutmeg, and cardamom for the filling.
  8. 8.
Once the dough has doubled in size, punch it down and roll it out into a rectangle on a lightly floured surface.
  9. 9.
Spread the softened butter evenly over the dough, leaving a small border around the edges.
  10. 10.
Sprinkle the filling mixture over the buttered dough.
  11. 11.
Starting from one long side, tightly roll the dough into a log shape.
  12. 12.
Cut the log into 12 equal-sized buns and place them in a greased baking dish.
  13. 13.
Pour the prepared caramel glaze over the buns, making sure to coat them evenly.
  14. 14.
Cover the baking dish with a kitchen towel and let the buns rise for another 30 minutes.
  15. 15.
Preheat the oven to 180°C (350°F).
  16. 16.
Bake the sticky buns for 25-30 minutes or until golden brown and the caramel is bubbling.
  17. 17.
Remove from the oven and let them cool for a few minutes before serving.

Treat your ingredients with care...

  • Jaggery — If jaggery is not available, you can substitute it with dark brown sugar for a similar flavor profile.
  • Cardamom — For the best flavor, use freshly ground cardamom pods instead of pre-ground cardamom.

Tips & Tricks

  • To make the buns extra fluffy, let the dough rise in a warm place without any drafts.
  • For a gooier texture, you can add chopped nuts or raisins to the filling mixture.
  • If you prefer a less sweet glaze, reduce the amount of jaggery or substitute it with honey.
