1.In a large pot, add the vegetable broth, onion, garlic, ginger, cinnamon sticks, star anise, cloves, and tamari or soy sauce. Bring to a boil and let it simmer for 30 minutes to allow the flavors to meld together.

2.While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

3.Strain the broth to remove the solids and return it to the pot. Discard the solids.

4.Add the mushrooms, bean sprouts, and bok choy to the broth. Simmer for an additional 5 minutes until the vegetables are tender.

5.Divide the cooked rice noodles among serving bowls. Ladle the hot broth and vegetables over the noodles.

6.Serve the Vegan Pho with lime wedges, fresh cilantro, Thai basil, mint leaves, and Sriracha or chili sauce on the side. Allow each person to customize their bowl according to their taste preferences.
