Ingredients
In this adaptation of Pho chay to Zambian cuisine, we have replaced the traditional Vietnamese ingredients with locally available Zambian ingredients. The original beef-based broth has been substituted with a vegetable broth, and the rice noodles have been retained to maintain the essence of the dish. The spices have been adjusted to suit the Zambian palate, resulting in a unique flavor profile that combines the best of both cuisines. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.

2.Add the julienned carrots, sliced cabbage, and green beans to the pot. Cook for 5 minutes, stirring occasionally.

3.Pour in the vegetable broth, soy sauce, lemon juice, ground cumin, ground coriander, and paprika. Season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes.

4.While the soup is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

5.To serve, divide the cooked rice noodles among serving bowls. Ladle the hot soup over the noodles. Garnish with fresh cilantro.
