1.Cook the buckwheat noodles according to the package instructions. Drain and rinse with cold water. Set aside.

2.In a large pot, add the beef brisket, onion, garlic, and ginger. Pour in the beef broth and bring to a boil. Reduce heat and simmer for 1 hour until the beef is tender.

3.Remove the beef from the broth and shred it into thin strips. Set aside.

4.In a small bowl, whisk together soy sauce, gochujang, rice vinegar, sesame oil, and sugar until well combined. Set aside.

5.To serve, divide the chilled buckwheat noodles into bowls. Ladle the spicy beef broth over the noodles. Top with shredded beef, cucumber, radish, and boiled egg halves.

6.Garnish with chopped green onions and sesame seeds. Serve immediately.
