1.In a large bowl, combine the mashed potatoes, minced meat, chopped onion, minced garlic, grated ginger, cayenne pepper, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

2.Take a small portion of the potato mixture and flatten it in your palm. Place a teaspoon of the meat filling in the center and shape the potato mixture into a ball, enclosing the filling completely. Repeat with the remaining mixture and filling.

3.Bring a large pot of salted water to a boil. Gently drop the dumplings into the boiling water and cook for about 10-12 minutes, or until they float to the surface. Remove the dumplings from the water using a slotted spoon and set aside.

4.In a separate saucepan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

5.Stir in the curry powder and dried thyme, and cook for another minute to release their flavors.

6.Add the canned diced tomatoes to the saucepan and season with salt and pepper. Simmer the sauce for about 10 minutes, allowing the flavors to meld together.
