Ingredients
In this Caspian adaptation of Quiche Lorraine, we replace the traditional bacon with spinach to create a vegetarian version. Additionally, we incorporate feta cheese and Caspian herbs and spices to infuse the dish with the flavors of the Caspian cuisine. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the chopped spinach to the pan and cook until wilted. Remove from heat and set aside.

4.In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt, pepper, dried dill, and ground turmeric.

5.Roll out the pre-made pie crust and line a greased pie dish with it.

6.Spread the cooked spinach and onion mixture evenly over the pie crust.

7.Sprinkle the crumbled feta cheese over the spinach mixture.

8.Pour the egg and milk mixture over the filling, ensuring it is evenly distributed.

9.Place the quiche in the preheated oven and bake for 30-35 minutes, or until the filling is set and the crust is golden brown.

10.Remove from the oven and let it cool for a few minutes before slicing and serving.
