Ingredients

In this Caspian adaptation of Quiche Lorraine, we replace the traditional bacon with spinach to create a vegetarian version. Preparation

    Preheat the oven to 180°C (350°F).

    In a pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

    Add the chopped spinach to the pan and cook until wilted. Remove from heat and set aside.

    In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt, pepper, dried dill, and ground turmeric.

    Roll out the pre-made pie crust and line a greased pie dish with it.
