1.Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions.

2.In a large skillet, heat the vegetable oil over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened.

3.Add the cooked kidney beans, diced tomatoes (with their juice), smoked paprika, dried thyme, cayenne pepper, salt, and black pepper to the skillet. Stir well to combine.

4.Reduce the heat to low and let the mixture simmer for 10-15 minutes, allowing the flavors to meld together.
