Preparation

  1. 1.
In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
  2. 2.
Add the beef cubes to the pot and cook until they are browned on all sides.
  3. 3.
Sprinkle the paprika, cumin, salt, and pepper over the beef, and stir well to coat the meat with the spices.
  4. 4.
Pour in the beef broth and add the bay leaves. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 2 hours, or until the beef is tender.
  5. 5.
While the beef is simmering, rinse the rice under cold water until the water runs clear. Drain the rice.
  6. 6.
In a separate pot, bring 600ml (2 1/2 cups) of water to a boil. Add the drained rice and a pinch of salt. Reduce the heat to low, cover the pot, and let the rice cook for about 15-20 minutes, or until it is tender and the water is absorbed.
  7. 7.
Once the beef is tender, remove the bay leaves from the pot. Serve the beef over a bed of fluffy rice. Garnish with fresh parsley.

Treat your ingredients with care...

  • Beef — For the most tender results, choose stewing beef with a good amount of marbling. You can also use a slow cooker to cook the beef on low heat for 6-8 hours for an even more tender texture.
  • Rice — Rinse the rice thoroughly before cooking to remove excess starch and achieve fluffy grains.

Tips & Tricks

  • For added flavor, you can sauté the beef cubes before adding them to the pot.
  • If you prefer a spicier dish, you can add a pinch of chili flakes or cayenne pepper to the beef while it simmers.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated for a quick and delicious meal.
