Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

2.Add the beef cubes to the pot and cook until they are browned on all sides.

3.Sprinkle the paprika, cumin, salt, and pepper over the beef, and stir well to coat the meat with the spices.

4.Pour in the beef broth and add the bay leaves. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 2 hours, or until the beef is tender.

5.While the beef is simmering, rinse the rice under cold water until the water runs clear. Drain the rice.

6.In a separate pot, bring 600ml (2 1/2 cups) of water to a boil. Add the drained rice and a pinch of salt. Reduce the heat to low, cover the pot, and let the rice cook for about 15-20 minutes, or until it is tender and the water is absorbed.

7.Once the beef is tender, remove the bay leaves from the pot. Serve the beef over a bed of fluffy rice. Garnish with fresh parsley.
