1.In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Pour in the white wine and cook until it evaporates, stirring constantly.

4.Gradually add the vegetable broth, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more.

5.Once the rice is cooked al dente, stir in the blanched nettles and grated smoked cheese. Cook for an additional 2-3 minutes until the cheese melts and the nettles are well incorporated.
