Treat your ingredients with care...
- Cod fillets — Make sure to remove any bones from the cod fillets before cooking.
- Arborio rice — Rinse the rice under cold water before using to remove excess starch and achieve a creamier texture.
- Lemon zest — Use a microplane or fine grater to zest the lemon, avoiding the bitter white pith.
Tips & Tricks
- To enhance the flavor, you can add a splash of white wine while sautéing the onions and garlic.
- For a creamier texture, stir in a tablespoon of grated Parmesan cheese at the end.
- If you prefer a stronger lemon flavor, squeeze a little fresh lemon juice over the risotto just before serving.
- Experiment with different herbs such as basil or dill to add your own twist to the dish.
- Leftover risotto can be transformed into delicious arancini by shaping it into balls, coating with breadcrumbs, and frying until golden brown.
