In this Pembrokeshire-inspired version of rosquillas, we incorporate local ingredients and flavors to give the dish a distinct regional twist. Instead of using traditional Spanish ingredients, we use Pembrokeshire honey and lavender to infuse the dough with a unique flavor profile that reflects the culinary heritage of the region. Preparation

1.In a large mixing bowl, combine the flour, sugar, baking powder, and salt.

2.In a small saucepan, heat the Pembrokeshire honey and dried lavender over low heat until warm. Remove from heat and let it steep for 10 minutes.

3.In a separate bowl, whisk together the eggs and milk. Strain the honey and lavender mixture into the egg mixture, discarding the lavender.

4.Gradually pour the wet ingredients into the dry ingredients, stirring until a dough forms.

5.Turn the dough out onto a lightly floured surface and knead for 5 minutes until smooth.

6.Divide the dough into small portions and roll each portion into a rope shape. Join the ends of each rope to form a ring.

7.In a deep pan, heat vegetable oil to 180°C (350°F). Fry the rosquillas in batches until golden brown, about 2-3 minutes per side.

8.Remove the rosquillas from the oil and drain on a paper towel-lined plate.

9.Dust the rosquillas with powdered sugar before serving.
