Preparation
-
1.In a bowl, combine the vegetable oil, lemon juice, minced garlic, ground coriander, ground cumin, paprika, salt, and black pepper. Mix well to form a marinade.
-
2.Add the pork cubes to the marinade and toss until they are evenly coated. Cover the bowl and refrigerate for at least 1 hour, allowing the flavors to meld together.
-
3.Preheat the grill to medium-high heat.
-
4.Thread the marinated pork cubes onto the soaked wooden skewers.
-
5.Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and slightly charred.
-
6.While the skewers are grilling, prepare the spicy peanut sauce. In a small saucepan, combine the peanut butter, soy sauce, lemon juice, honey, chili flakes, and water. Cook over low heat, stirring constantly, until the sauce is smooth and heated through.
-
7.Serve the Namibian-style pork skewers hot off the grill, accompanied by the spicy peanut sauce.
Treat your ingredients with care...
- Pork loin — Choose lean cuts of pork loin for a healthier option. Trim any excess fat before cutting into cubes to ensure a lean and tender result.
- Wooden skewers — Soaking the wooden skewers in water before grilling prevents them from burning during cooking. This also helps to keep the pork moist and tender.
Tips & Tricks
- For an extra burst of flavor, brush the skewers with the marinade while grilling.
- If you prefer a milder spice level, reduce the amount of chili flakes in the peanut sauce.
- Serve the skewers with a side of Namibian-style coleslaw for a refreshing contrast to the smoky flavors.
- If you don't have a grill, you can also cook the skewers in a grill pan or under the broiler in your oven.
- Experiment with different types of meat, such as chicken or beef, for a variation of flavors.
