Preparation

1.Heat the olive oil in a tagine or large skillet over medium heat.

2.Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

3.Add the diced bell peppers and cook for another 2-3 minutes until they begin to soften.

4.Stir in the diced tomatoes, ground cumin, ground coriander, paprika, turmeric, and cayenne pepper (if using). Cook for 2 minutes to allow the spices to bloom.

5.Add the shrimp to the tagine and pour in the vegetable broth. Season with salt and pepper to taste.

6.Cover the tagine and simmer on low heat for 15-20 minutes, or until the shrimp are cooked through and the flavors have melded together.
