Preparation

1.Preheat the oven to 180°C (350°F). Grease the ramekins with butter and dust with powdered sugar.

2.In a saucepan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.

3.Gradually whisk in the milk until smooth. Cook for another 2 minutes until the mixture thickens.

4.Remove the saucepan from heat and add the chopped Brazilian chocolate. Stir until the chocolate is completely melted and the mixture is smooth.

5.In a separate bowl, whisk the egg yolks, sugar, vanilla extract, and salt until pale and creamy.

6.Slowly pour the chocolate mixture into the egg yolk mixture, whisking continuously.

7.In a clean bowl, beat the egg whites until stiff peaks form.

8.Gently fold the beaten egg whites into the chocolate mixture until well combined.

9.Divide the mixture evenly among the prepared ramekins, filling them about three-quarters full.

10.Bake for 15-20 minutes or until the soufflés have risen and are set on top.

11.Remove from the oven and dust with powdered sugar. Serve immediately.
