Preparation

    Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

    Add the beef chunks and brown them on all sides. Remove the beef from the pot and set aside.

    In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened and lightly browned.

    Pour in the red wine and scrape the bottom of the pot to release any browned bits.

    Add the beef broth, tomato paste, bay leaves, rosemary, and thyme. Stir well to combine.
