1.In a large pot, combine the coconut milk, chicken broth, lemongrass, ginger, turmeric powder, coriander powder, and cumin powder. Bring to a simmer over medium heat.

2.In a separate pan, heat the vegetable oil and sauté the onion and garlic until fragrant and translucent.

3.Add the sautéed onion and garlic to the pot with the coconut milk mixture.

4.Add the carrot, bell pepper, cooked chicken, and mushrooms to the pot. Simmer for 10-15 minutes until the vegetables are tender.
