Ingredients

1.In a large mixing bowl, combine the mashed plantains, all-purpose flour, baking powder, allspice, nutmeg, cinnamon, and salt.

2.Add the coconut milk, brown sugar, and vanilla extract to the bowl. Mix well until all the ingredients are thoroughly combined.

3.Heat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil.

4.Spoon about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

5.Repeat the process with the remaining batter, adding more coconut oil to the skillet as needed.

6.Serve the Caribbean Spiced Plantain Pancakes warm with a dollop of coconut yogurt and a sprinkle of toasted coconut.
