1.Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.

2.In a large skillet, heat the vegetable oil over medium heat. Add the seafood and cook until slightly opaque.

3.Add the shiitake mushrooms, snap peas, carrots, and bamboo shoots to the skillet. Stir-fry for 2-3 minutes.

4.In a small bowl, whisk together the soy sauce, miso paste, ginger, and seafood broth. Pour the mixture over the seafood and vegetables in the skillet.

5.Reduce the heat to low and simmer for 5 minutes, allowing the flavors to meld together.

6.In a large baking dish, layer the cooked rice and the seafood-vegetable mixture. Repeat the layers until all the ingredients are used, ending with a layer of rice.
