Treat your ingredients with care...

  • Phyllo pastry — Ensure that the phyllo pastry is thawed if using frozen. Keep it covered with a damp cloth while working to prevent it from drying out.
  • Feta cheese — Use high-quality feta cheese for the best flavor. Crumble it into small pieces for even distribution in the filling.

Tips & Tricks

  • For a variation, add some chopped sun-dried tomatoes or olives to the feta cheese mixture for an extra burst of flavor.
  • If you prefer a lighter version, you can use reduced-fat feta cheese and substitute some of the eggs with egg whites.
  • Make sure to brush each layer of phyllo pastry with melted butter to achieve a crispy and golden crust.
  • Leftover pie can be stored in the refrigerator for up to 3 days. Reheat in the oven to regain its crispiness.
