1.Preheat the oven to 180°C (350°F).

2.In a large frying pan, heat the olive oil over medium heat. Add the onions and garlic, and sauté until translucent.

3.Add the carrots, courgette, and green beans to the pan. Cook for 5 minutes, stirring occasionally.

4.In a separate ovenproof dish, arrange a layer of sliced potatoes at the bottom. Top with a layer of tomatoes.

5.Spoon the sautéed vegetables over the tomato layer. Sprinkle with dried oregano, dried thyme, salt, and pepper.

6.Repeat the layers until all the vegetables are used, finishing with a layer of tomatoes on top.

7.Cover the dish with aluminum foil and bake for 45 minutes.

8.Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
