1.Cook the udon noodles according to package instructions. Drain and set aside.

2.In a large pot, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and sauté until the onion becomes translucent.

3.Add the ground cumin, ground coriander, and paprika to the pot. Stir well to coat the onions and garlic with the spices.

4.Pour in the vegetable broth and bring it to a simmer. Allow the broth to simmer for about 10 minutes to allow the flavors to meld together.

5.Add the sliced bell pepper and julienned carrots to the broth. Cook for an additional 5 minutes until the vegetables are slightly tender.

6.Meanwhile, bring a separate pot of water to a gentle simmer. Carefully crack the eggs into the simmering water and poach them for about 3-4 minutes until the whites are set but the yolks are still runny. Remove the poached eggs from the water using a slotted spoon and set aside.
