Ingredients
In this adaptation of the French Velouté, we have incorporated Chinese aristocrat cuisine elements to create a unique fusion dish. The original French recipe typically uses a white stock and cream as the base, while our Chinese aristocrat Mushroom Velouté replaces the cream with a vegetable broth infused with traditional Chinese spices. Additionally, we have added scallions and sesame oil as garnishes to enhance the flavors and provide a distinct Chinese touch. We alse have the original recipe for Velouté, so you can check it out.

Preparation
-
1.Clean the mushrooms and slice them into thin pieces.
-
2.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and the onion turns translucent.
-
3.Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown slightly.
-
4.Pour in the vegetable broth and add the star anise and cinnamon stick. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to allow the flavors to meld together.
-
5.Remove the star anise and cinnamon stick from the pot. Use an immersion blender or transfer the mixture to a blender to puree until smooth.
-
6.Return the soup to the pot and stir in the soy sauce and rice vinegar. If desired, mix the cornstarch with a little water to create a slurry and add it to the soup to thicken.
-

-
8.Ladle the Mushroom Velouté into bowls and garnish with thinly sliced scallions. Drizzle each serving with a touch of sesame oil.
