Preparation

1.Heat the vegetable oil in a large skillet over medium heat.

2.Add the chopped onion and minced garlic to the skillet and sauté until the onion becomes translucent.

3.Add the diced bell pepper and celery to the skillet and cook for another 2-3 minutes.

4.Add the chicken or shrimp to the skillet and cook until it is browned on all sides.

5.Stir in the chopped tomatoes, Cajun seasoning, paprika, cayenne pepper, and dried thyme. Cook for 2-3 minutes to allow the spices to release their flavors.

6.Pour in the coconut milk and season with salt to taste. Stir well to combine all the ingredients.

7.Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the chicken is cooked through or the shrimp is pink and opaque.
