Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened and translucent.

2.Add the minced garlic and grated ginger to the pot and cook for another minute, until fragrant.

3.Add the lamb chunks to the pot and cook until browned on all sides.

4.In a small bowl, combine the ground cumin, ground coriander, paprika, cayenne pepper, and turmeric. Sprinkle the spice mixture over the lamb and stir well to coat.

5.Pour in the beef or vegetable broth and diced tomatoes. Stir to combine.

6.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour, or until the lamb is tender.

7.Add the diced potatoes and sliced carrots to the pot. Continue to simmer for another 30 minutes, or until the vegetables are cooked through.
