Ingredients

In this Iraqi adaptation of Ají de Fideos, we incorporate the distinct flavors of Iraqi cuisine. We replace some of the traditional Peruvian spices with Iraqi spices like cumin, coriander, and turmeric to infuse the dish with Middle Eastern aromas. Additionally, we use ingredients commonly found in Iraqi cuisine, such as lamb or beef, to enhance the richness of the stew. Preparation

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.

    Stir in the ground cumin, ground coriander, and ground turmeric, and cook for another minute to toast the spices.
