Ingredients
In this Iraqi adaptation of Ají de Fideos, we incorporate the distinct flavors of Iraqi cuisine. We replace some of the traditional Peruvian spices with Iraqi spices like cumin, coriander, and turmeric to infuse the dish with Middle Eastern aromas. Additionally, we use ingredients commonly found in Iraqi cuisine, such as lamb or beef, to enhance the richness of the stew. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.

2.Add the lamb or beef cubes to the pot and cook until they are browned on all sides.

3.Stir in the ground cumin, ground coriander, and ground turmeric, and cook for another minute to toast the spices.

4.Add the tomato paste and chopped ají amarillo peppers to the pot, and stir well to combine.

5.Pour in the beef or vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 30 minutes to allow the flavors to meld together.

6.Meanwhile, cook the spaghetti or fideos noodles according to the package instructions until al dente. Drain and set aside.

7.Once the stew has simmered, add the cooked noodles to the pot and stir gently to combine. Season with salt and pepper to taste.

8.Allow the stew to simmer for an additional 5 minutes to let the flavors meld together.

9.Serve the Iraqi-style Ají de Fideos hot, garnished with fresh cilantro and accompanied by lemon wedges for squeezing over the stew.
