Preparation

1.Rinse the jasmine rice under cold water until the water runs clear. Drain well.

2.In a medium-sized pot, combine the rice, water, and salt. Bring to a boil over medium heat.

3.Reduce the heat to low, cover the pot, and let the rice simmer for 15-20 minutes, or until all the water is absorbed and the rice is cooked.

4.While the rice is cooking, heat the vegetable oil in a pan over medium heat. Add the diced tofu and cook until golden brown.

5.Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they are slightly tender.

6.In a small bowl, mix together the soy sauce, sesame oil, ground coriander, ground cumin, turmeric powder, and chili flakes (if using). Pour the mixture over the tofu and vegetables, stirring well to coat.

7.Remove the cooked rice from the heat and let it cool slightly. Once cooled, transfer the rice to a large mixing bowl.

8.Add the tofu and vegetable mixture to the rice and mix well until all the ingredients are evenly distributed.

9.Cut the banana leaves or parchment paper into squares of approximately 6x6 inches.

10.Place a spoonful of the rice mixture onto the center of each square and fold the sides over to form a tight parcel.

11.Steam the rice parcels for 15-20 minutes, or until they are heated through.

12.Remove the parcels from the steamer and let them cool slightly before serving.
