Preparation

    Rinse the jasmine rice under cold water until the water runs clear. Drain well.

    In a medium-sized pot, combine the rice, water, and salt. Bring to a boil over medium heat.

    Reduce the heat to low, cover the pot, and let the rice simmer for 15-20 minutes, or until all the water is absorbed and the rice is cooked.

    While the rice is cooking, heat the vegetable oil in a pan over medium heat. Add the diced tofu and cook until golden brown.

    Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they are slightly tender.

    In a small bowl, mix together the soy sauce, sesame oil, ground coriander, ground cumin, turmeric powder, and chili flakes (if using). Pour the mixture over the tofu and vegetables, stirring well to coat.
