Preparation

1.In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

4.Stir in the ground cumin, ground coriander, paprika, salt, and pepper. Cook for a minute to allow the spices to release their flavors.

6.Pour in the water or broth and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
