Preparation

1.Preheat the oven to 180°C (350°F).

2.In a saucepan, combine the sugar and water. Bring to a boil and simmer for 5 minutes to make a simple syrup. Remove from heat and let it cool.

3.In a mixing bowl, combine the tapioca flour, shredded coconut, melted butter, ground cinnamon, and vanilla extract. Mix well until a dough forms.

4.Divide the dough into two equal parts. Roll out one part of the dough on a lightly floured surface to fit the bottom of a greased baking dish.

5.Pour half of the passion fruit juice over the rolled-out dough. Sprinkle half of the chopped walnuts on top.

6.Roll out the second part of the dough and place it on top of the walnut layer. Pour the remaining passion fruit juice over the dough and sprinkle the remaining walnuts.

7.Cut the baklava into diamond-shaped pieces.

8.Bake in the preheated oven for 30-35 minutes, or until golden brown.

9.Remove from the oven and pour the cooled simple syrup over the hot baklava.

10.Allow the baklava to cool completely before serving.
