Ingredients

In this adaptation of Basundi for the Taoist diet, we replace the traditional sugar with jaggery or honey as a natural sweetener. Additionally, we incorporate the use of rose petals, which symbolize purity and tranquility in Taoist culture, as a garnish. Preparation

  1. 1.
In a heavy-bottomed pan, bring the milk to a boil over medium heat.
  2. 2.
Reduce the heat to low and let the milk simmer, stirring occasionally, until it reduces to approximately half its original volume. This process may take around 1 to 1.5 hours.
  3. 3.
Add the jaggery or honey to the simmering milk and mix well until it dissolves completely.
  4. 4.
Crush the saffron strands between your fingers and add them to the milk along with the crushed cardamom pods. Stir gently to incorporate the flavors.
  5. 5.
Continue simmering the mixture for another 10-15 minutes until it thickens to a creamy consistency.
  6. 6.
Remove the Taoist Basundi from heat and let it cool to room temperature.
  7. 7.
Once cooled, refrigerate the Basundi for a few hours to chill.
  8. 8.
Serve the chilled Taoist Basundi in individual bowls, garnished with chopped almonds, pistachios, and a sprinkle of rose petals.

Treat your ingredients with care...

  • Jaggery — Ensure that the jaggery is finely grated or chopped to aid in its quick dissolution in the milk.
  • Saffron — To enhance the flavor and color, soak the saffron strands in a tablespoon of warm milk for a few minutes before adding them to the Basundi.

Tips & Tricks

  • To save time, you can use condensed milk instead of reducing the milk from scratch. Adjust the sweetness accordingly.
  • For a vegan version, substitute the milk with almond milk and use maple syrup or agave nectar as a sweetener.
