However, in this Cretan adaptation, we incorporate Cretan herbs such as oregano and thyme, which are commonly used in Mediterranean cuisine. Additionally, olive oil is used instead of vegetable oil to add a distinct Cretan flavor. The dish is also cooked at a lower temperature for a longer duration to allow the flavors to meld together. Preparation

1.Soak the dried white beans in water overnight. Drain and rinse before using.

2.In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.

3.Add the diced carrots, celery, and red bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.

4.Add the soaked white beans, vegetable broth, canned diced tomatoes, dried oregano, and dried thyme to the pot. Stir well to combine.

5.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 1.5 to 2 hours, or until the beans are tender and the flavors have melded together.
