Preparation

1.In a small bowl, whisk together the vegetable broth, soy sauce, rice vinegar, mirin, sesame oil, cornstarch, and water. Set aside.

2.Heat the vegetable oil in a large skillet or wok over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.

3.Add the bell peppers, zucchini, snap peas, and broccoli to the skillet. Stir-fry for 3-4 minutes, until the vegetables are slightly tender but still crisp.

4.Push the vegetables to one side of the skillet and add the tofu cubes to the other side. Cook for 2-3 minutes, until the tofu is lightly browned.

5.Pour the prepared sauce over the vegetables and tofu. Stir gently to coat everything evenly. Cook for an additional 2-3 minutes, until the sauce thickens slightly.

6.Remove from heat and stir in the fresh cilantro and basil. Season with salt and pepper to taste.

7.Serve the Taoist Berthoud hot, garnished with additional fresh herbs if desired.
