Additionally, we have increased the proportion of vegetables and reduced the amount of meat typically used in the original recipe. The seasoning has been adjusted to incorporate Taoist principles of balance, using light vegetable broth and aromatic herbs to enhance the flavors. Preparation

  1. 1.
    In a small bowl, whisk together the vegetable broth, soy sauce, rice vinegar, mirin, sesame oil, cornstarch, and water. Set aside.

    Heat the vegetable oil in a large skillet or wok over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.

    Add the bell peppers, zucchini, snap peas, and broccoli to the skillet. Stir-fry for 3-4 minutes, until the vegetables are slightly tender but still crisp.

    Push the vegetables to one side of the skillet and add the tofu cubes to the other side. Cook for 2-3 minutes, until the tofu is lightly browned.
