Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the beef or lamb chunks and brown them on all sides. Remove the meat from the pot and set aside.

2.In the same pot, add the diced onion, sliced carrots, and diced potatoes. Cook until the vegetables start to soften, about 5 minutes.

3.Add the sliced chorizo, minced garlic, paprika, and saffron threads to the pot. Stir well to combine and cook for another 2 minutes.

4.Return the browned meat to the pot and pour in the beef or vegetable broth and Guinness beer. Season with salt and pepper to taste.

5.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the meat is tender and the flavors have melded together.
