Treat your ingredients with care...
- Star anise — Use whole star anise pods for the best flavor. Remove them before serving.
- Sichuan peppercorns — Toast the peppercorns in a dry pan before using to enhance their aroma.
- Dried chili peppers — Adjust the amount according to your spice preference. Remove the seeds for a milder heat.
- Doubanjiang — Look for this spicy bean paste in Asian grocery stores or online. It adds depth and heat to the stew.
Tips & Tricks
- For an extra layer of flavor, marinate the beef shank chunks in the spice mixture overnight before cooking.
- Adjust the spiciness by adding more or fewer dried chili peppers.
- Skim off any excess fat that rises to the surface during cooking for a leaner stew.
- Serve the stew with a side of pickled vegetables to balance the richness and spice.
- Leftovers can be refrigerated and enjoyed the next day, as the flavors intensify over time.
