1.In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.

2.Add the ground cumin, coriander, turmeric, paprika, and chili powder to the pot. Stir well to coat the onions and garlic with the spices.

3.Pour in the fish stock and bring it to a simmer. Let it cook for about 10 minutes to allow the flavors to meld together.

4.Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.

5.Carefully clean the sea urchin, removing the spines and extracting the roe. Set aside.

6.Add the sea urchin roe to the simmering soup and cook for an additional 2-3 minutes until heated through.
