The original recipe typically uses Korean mushrooms such as shiitake or oyster mushrooms, while our Barbadian version incorporates a variety of locally available mushrooms like portobello, button, and cremini. We also infuse the stir-fry with Barbadian spices and herbs, such as thyme and allspice, to add a distinct Caribbean flavor profile. 1.Heat the vegetable oil in a large skillet or wok over medium-high heat.
