Preparation
-
1.In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt for the pizza dough. Mix well.
-
2.Add the olive oil and warm water to the dry ingredients. Knead the dough until it becomes smooth and elastic. Cover the bowl with a damp cloth and let the dough rise for about 1 hour, or until it doubles in size.
-
3.Meanwhile, prepare the Sindhi-style tomato sauce. Heat vegetable oil in a pan over medium heat. Add the chopped onion and minced garlic. Sauté until the onion turns translucent.
-
4.Add the cumin powder, coriander powder, turmeric powder, and red chili powder to the pan. Cook for a minute to toast the spices.
-
5.Pour in the tomato puree and season with salt. Simmer the sauce for 10-15 minutes, until it thickens slightly.
-
6.Preheat the oven to 200°C (400°F).
-
7.Once the pizza dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a thin oval shape.
-
8.Place the rolled dough on a baking sheet. Spread a generous amount of the Sindhi-style tomato sauce over the dough.
-
9.Arrange the sliced potatoes, onions, and green chilies on top of the sauce. Sprinkle grated mozzarella cheese over the toppings.
-
10.Bake the pizzas in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese has melted.
-
11.Garnish with fresh coriander leaves and serve hot.
Treat your ingredients with care...
- Potatoes — Ensure that the potatoes are boiled until they are tender but not mushy. Slice them thinly for even cooking and distribution on the pizza.
- Green chilies — Adjust the amount of green chilies according to your spice preference. You can remove the seeds for a milder heat.
- Tomato puree — If you don't have tomato puree, you can blend fresh tomatoes to make your own puree.
Tips & Tricks
- For a crispier crust, preheat the baking sheet in the oven before placing the rolled dough on it.
- Experiment with different Sindhi spices like amchoor (dried mango powder) or garam masala to add more depth of flavor.
- Customize the toppings by adding other vegetables like bell peppers or tomatoes.
- Serve the Sindhi-style Canotto Pizza with a side of mint chutney or yogurt raita for a refreshing contrast.
- Leftover pizza can be reheated in a toaster oven or on a stovetop griddle for a quick and delicious snack.
