Preparation

    Preheat the oven to 350°F (175°C).

    Heat the olive oil in a large skillet over medium heat.

    Add the onions and peppers and sauté until they are soft and caramelized, about 10 minutes.

    Add the seitan to the skillet and cook until it is heated through, about 5 minutes.

    Cut the hoagie rolls in half and place them on a baking sheet.

    Place 2 slices of provolone cheese on each roll.

    Divide the seitan mixture evenly among the rolls.
